1.配方: 玉米渣100千克,淀粉酶400~500克,氯化钙200克。 2.工艺流程: 玉米→清选→破碎→去皮、去胚→粉碎→淘洗→浸泡→煮制(液化)→发酵(糖化)→过滤→熬制→灌装 3.操作要点: (1)玉米糖的制备 选用粉质玉米为原料,经清选去杂后,先用***破碎,除去玉米皮和胚,然后再粉碎成小米粒大小的玉米粒。 (2)淘洗、浸泡 取100千克玉米糙,用清水淘洗2遍,倒人浸泡缸内,加入150千克水。将200克淀粉酶、200克氯化钙分别用温水化开,倒人浸泡缸内,混合均匀,浸泡2-3小时。 (3)煮制 在大锅内加入100千克水,然后将水烧开。把浸泡好的玉米糖从浸泡缸内取出,倒人沸腾的锅内进行煮制。继续加热至沸腾,再煮30~40分钟,然后停止加热,在煮制过程中需不停地搅拌,以防糊锅。 (4)发酵 向锅内加入90千克左右冷水,搅拌均匀,待玉米糊的温度降到60-70℃时,加入预先用温水化开的淀粉酶(冬天加200克,夏天加300克),搅拌均匀,然后把玉米糊料转移到发酵缸内。在60℃下发酵2-3小时。 (5)过滤 发酵完成后用细布袋将料液进行挤压过滤,过滤出的即为糖液,把糖液倒人熬糖锅。滤出的糖糖含有相当高的蛋白质,可做畜禽饲料。 (6)熬制 用大火将糖液加热至沸腾,待沸滚的稠汁呈现鱼鳞状时,改用小火熬制。当浓度达到35'波美度时(若无波美度计,可用小木棍挑起稠汁观察,其不滴汤而拔丝时,即符合要求),立即停止加热。也可根据用途的不同按实际需要熬制成相应的浓度。在熬制中要不断搅拌,避免糊锅,否则熬制出的糖稀颜色深,有苦味。 (7)灌装 熬制好的糖稀起到缸内,充分**后,即可装在卫生、干燥的桶内
